Step 1: Shred and massage the red cabbage.

First shred the cabbage into fine strips. Also peel and finely chop the onion. Then place both in a bowl, add the salt and massage for 1-2 minutes until the cabbage becomes softer and has a light, shiny color.

Step 2: Season and marinate the coleslaw.

Now add the red wine vinegar, herb vinegar and canola oil and mix everything together. Season to taste with salt and pepper and mix again. If you like, you can mix in some fresh parsley or other herbs.

Ingredients

  • 14 oz (400 g) red cabbage or other cabbage*
  • 1 red onion
  • 2 tbsp red wine vinegar
  • 1 tbsp herb vinegar or white vinegar
  • 2 tbsp canola oil or olive oil
  • ½ tsp salt or to taste
  • ½ tsp pepper or to taste
  • ½ bunch fresh parsley chopped
  • sesame seeds or walnuts or vegan feta optional for garnish

Instructions

  • Remove the stalk from the cabbage. Slice the cabbage into fine strips or finely shred with a mandoline. Peel and finely chop the onion. Then transfer both to a bowl.

  • Add salt and knead for 1-2 minutes until the cabbage softens and acquires a bright glossy color.

  • Add red wine vinegar, herb vinegar and canola oil and mix everything together. Season with salt and pepper and stir through again. If you like, you can add fresh parsley or other herbs.

  • You can serve the salad immediately, but it tastes even better if you leave it covered in the refrigerator overnight.

  • Garnish with sesame seeds or other toppings such as walnuts or vegan feta if desired.
