Our Steamed Thermomix Christmas Pudding is perfect for your Christmas Day table! This recipe takes no time at all to make, and can be made up to two months in advance and then stored until needed.

Over the past few years since I've started hosting Christmas for my own family, I'm really eager to continue some of the traditions that I grew up with, and this Steamed Thermomix Christmas Pudding recipe is one of those. I've now made this recipe a couple of times in the Thermomix and each time we've enjoyed a rich, soft pudding.

You will love:

Simple to prepare - don't let the idea of making a Christmas Pudding daunt you, this recipe really takes not time at all to make.

Adaptable - left things to the last minute? The dried fruit and almonds can be left to soak for just 1 - 2 hours.

Make ahead - make this Christmas Pudding a couple of months ahead of time and store in a cool, dry place until ready to enjoy.

Ingredients

  • Dried Mixed Fruit
  • Blanched Almonds
  • Sherry - can be substituted with orange juice
  • Butter - softened
  • Brown Sugar
  • Plain Flour
  • Mixed Spice
  • Ginger
  • Cinnamon
  • Eggs
  • Breadcrumbs.

How to make a Christmas Pudding in a Thermomix

Step 1. Combine the butter, sugar and vanilla extract until pale and creamy.

Step 2. Add the flour, spices and mix.

Step 3. Scrape down the sides of the bowl and add the eggs and breadcrumbs.

Step 4. Add the soaked fruit and nuts and mix.

Step 5. Place the mixture into a pudding dish and gently smooth the surface.

Step 6. Carefully cover the dish with a layer of baking paper and foil before placing into Varoma.

Step 7. Steam the pudding until cooked through.

Step 8. Serve with our Vanilla Custard or Brandy Custard and enjoy!

Recipe Hints and Tips

I like to let my fruit soak for up to two weeks before making this recipe, however you can soak your fruit for 1 - 2 hours if time is short.

I use a 2 litre non stick pudding tin to make this recipe, mine has a diameter of 13cm and it fits into the varoma basket comfortably.

Please check your pudding tin prior to starting this recipe to make sure it will fit in the varoma basket. A smaller tin down to 1.4 L will accomodate this recipe

To make it easier to test the pudding as it cooks, I cover the top of the pudding tin with a piece of baking paper and then secure it with foil.

This Thermomix Christmas Pudding can be made well in advance, just store it in a cool dark place like the back of your pantry.

Please be careful when removing the varoma basket from the top of your Thermomix or taking the lid of to check the pudding. Always make sure that you open the lid the opposite direction to where you are standing to allow the steam to escape.

You can also freeze this Christmas Pudding.

  • Varoma Basket

  • 2 litre pudding dish

Ingredients

  • 350 grams mixed fruit
  • 60 grams blanched almonds chopped into small pieces
  • 2 tablespoon sherry can substitute with orange juice
  • 125 grams butter softened
  • 110 grams brown sugar
  • 1 teaspoon vanilla extract
  • 75 grams plain flour
  • ½ teaspoon mixed spice
  • ¼ teaspoon ginger
  • ½ teaspoon cinnamon
  • 2 eggs
  • 50 grams bread crumbs You will need approximately 3 slices of day old bread

Instructions

  • A day in advance (or a couple of hours before if in a hurry) place the mixed fruit, chopped blanched almonds and sherry into an airtight container. Gently shake the container to mix the sherry through and set aside until needed.

  • Place approximately 3 pieces of day old bread which has been roughly torn into your Thermomix bowl and blitz for 10 seconds, speed 7 to turn into breadcrumbs. Set aside until needed.

  • Place the butterfly into your Thermomix bowl and add the butter, brown sugar and vanilla extract. Mix for 20 seconds on speed 3.

  • Scrape down the sides of the bowl and mix again for 20 seconds speed 3.

  • Remove the butterfly and add the flour, mixed spice, cinnamon and ginger and mix for 10 secs, speed 4.

  • Scrape down the sides of the bowl and add the eggs and breadcrumbs and mix for 10 seconds speed 4.

  • Add the soaked fruit and almonds and mix 20 seconds, speed 3, REVERSE to combine.

  • Transfer the mixture to a non stick 1.6 litre pudding tin (mine was a non stick one approximately 13cm wide) and cover the top with a layer of baking paper and foil. ** Please check your tin prior to starting this recipe to make sure it will fit in the varoma basket. You can use a smaller pudding tin (down to 1.4L)

  • Place the pudding steamer in the bottom of varoma basket. Add 1700g of water to a clean Thermomix bowl and cook for 60 minutes, varoma temp, sp 1.5.

  • Add more water to bowl if needed (please be careful when removing the varoma from your Thermomix) and cook for a further 60 mins at the same temp/speed. Add more water again and cook another 60mins same temp/speed, check your pudding and if the colour still isn't even and it's not cooked through, add some extra water to bowl if needed and cook for a further 30 mins var temp, sp 1.5.

  • Once cooked, allow your pudding to cool in the tin before wrapping in a layer of baking paper and foil and storing in a dark, cool place until needed.

    If I'm making this with the orange juice (my sister in law is pregnant so want to avoid the sherry), can I still make in advance say 2 weeks? Or best to make fresh?

    Looks delicious. Sadly my pudding tin is too big for the varoma, even without the lid. I will prepare the mixture in the thermo and cook it in a big pan of boiling water instead. Do you have a recommendation of how long to cook using this method?

      Hi Monica, Although you can double the recipe, you may find that it exceeds the maximum fill line of your Thermomix Bowl and the size of the pudding basin required may not fit in your varoma tray xx

    Congratulations on a great recipe and thanks so much for sharing. The only changes I made were to soak the mixed fruit in 6 tablespoons of sherry (the fruit was pretty old and hard so needed some encouragement to soften - that's my excuse and I'm sticking to it) and I used my steam oven instead of the Varoma. The fruit for the first pudding soaked for 3 days then because the finished product was so great it was scoffed in one sitting on Christmas Day, so I soaked more fruit overnight and steamed another pudding for Boxing Day dessert. Both puddings were absolutely yummy so don't be put off if you can only soak your fruit for a few hours. Give it a go. This will be the Cookhouse's go-to Christmas Pudding for ever and a day.     I'm making it in a pudding basin...that would be ok to use instead of a pudding tin wouldn't it?
    If I am heating it up conventionally after it's cooked...how long would it need being steamed?

    Divine <3 made the first batch (used brandy bc its what I had) in the Thermomix Darole Moulds (35minutes varoma), makes the perfect 8. Kids devoured them. Made my second batch & struggling to keep the kids out until Christmas Day - about to go for my 3rd round - yum! Great recipe thank you x

    Hi, i finally got around to trying the pudding in individual ramekins, they look great & smell amazing!
    Same temp & speed & i cooked for 1 hour & 15 mins, 3 ramekins in the varoma.

    Hi there, just wondering if I need the varoma lid on whilst it is cooking? My pudding tin fits in the varoma basket, but is too high for the lid to sit on top 🙂 Thanks

      HI Maryanne, You could definitely make this in individual ramekins. I would cook it on the same temperature and speed however when it comes to time, that will really depend on the size of the ramekins you use. Sorry I can't be of more help xx
