Insanely delicious, this creamy piña colada mocktail is perfect for hot summer days. It's non-alcoholic and served over ice, so it's quick to make with no messy clean up.

We love a good mocktail recipe (What is a mocktail?) in our house - especially when pineapple juice is involved - and this one is a hit. I often make this virgin piña colada recipe when I want a creamy drink, but am not ready to embrace the higher calorie count that comes with adding the liquor of a traditional piña colada.

Piña colada mocktails were one of my favorite summer sips when I was pregnant with my daughter and craving cold, fruity drinks.

When developing this recipe, there was one guiding principle - I don’t always want to haul out my blender. Especially for one drink. So how can I make this a non-blended drink? Are piña coladas even served on the rocks? Ever?

Well they are now! And we’re skipping the piña colada mix and making a better tasting drink ourselves. Pineapple juice makes it refreshing and the cream of coconut adds a richness and sweetness. Fresh lime juice brightens up the drink and a splash of club soda to bring it all into balance.

  • Cream of coconut- This is sweet and creamy and VERY different from coconut cream. Pay attention and be sure to use the sweetened version. Look for it in the mixer section of your grocery or liquor store.
  • Pineapple Juice - Look for 100% pineapple juice.
  • Fresh Lime - Fresh lime juice is important in this recipe. You'll need about 1 lime per drink.
  • Simple syrup - Super easy to make a home with pantry ingredients! Simple syrup keeps in the refrigerator for weeks, so make it ahead of time and be ready for happy hour! (Or up the pineapple flavor with pineapple simple syrup.)
  • Club soda - Plain sparkling water works great if you don't have club soda on hand. If you don't like the fizz or want more coconut flavor, you can swap club soda out for coconut water.

How to Make a Piña Colada Mocktail

Combine pineapple juice, cream of coconut, lime juice and simple syrup in a co*cktail shaker filled with ice.

Shake well. Strain into a glass filled with fresh ice.

Top with club soda.

Garnish with some pineapple leaves, pineapple slices, and/or a maraschino cherry. Sip and enjoy!

Recipe Tips

  • For best results, make this refreshing drink right before serving. If it sets too long it will start to separate and look much less delicious (but still taste great!).
  • Want to make this into an alcoholic drink for a more traditional piña colada? Add 1.5 oz white rum into the co*cktail shaker with the rest of the ingredients and leave out the club soda.

Make it a Frozen Piña Colada Mocktail

To make these into frozen drinks, swap the club soda for 3-4 ice cubes and blend all of the ingredients in a high-speed blender until smooth. You can also use a couple frozen pineapple chunks instead of ice cubes.

What’s the difference between cream of coconut and coconut cream?

In a word - sugar. Cream of coconut is sweetened, while coconut cream usually comes unsweetened. If all you have on hand is unsweetened coconut cream, increase the simple syrup in the recipe by 1 oz so you’re using a total of 1.5 oz in your mocktail.

I buy cream of coconut at my local grocery store. (Coco Lopez cream of coconut is widely available in the U.S.) Look in the alcohol/liquor section, near the non-alcoholic co*cktail mixers.

Ingredients

  • 1 oz cream of coconut
  • 0.5 oz lime juice
  • 0.5 oz simple syrup
  • 1 oz club soda

Instructions

Combine pineapple juice, cream of coconut, lime juice, and simple syrup in a co*cktail shaker filled with ice.

Shake well.

Strain into a rocks glass or hurricane glass filled with fresh ice.

Top with club soda.

Garnish with a pineapple wedge, lime wedge, or pineapple leaves.
