The area is well known for Pendle Witch Trials in 1612 and still to this day you can visit the area, walk the Pendle witch trails and soak up the atmosphere and stunning countryside, it’s a fascinating place to visit.

We visit the Pendle Witch trails every autumn, and always call in at the witchy shop and spend the day walking on the Pendle witch trails.

And waiting for me when I get home is always a bowlful of Pendle Witch stew…

Always slowly simmered in a big black pan using lamb and fresh seasonal vegetables and herbs which mingled together create and amazingly tasty warming dinner.

This is one lamb casserole slow cooker recipe you’ll want to make again and again. It’s delicious.

This is just the BEST lamb stew recipe!

I always kinda think that this is the type of stew a witch would cook up, slowly simmered, nourishing and if she’d had a slow cooker, she’d definitely have thrown it in that.

Equipment Needed

  • Chopping board
  • Sharp knife
  • Tablespoon
  • Teaspoon
  • Measuring jug
  • Slow cooker – use a slow cooker with a hob safe inner pan – or do the hob cooking parts in a regular saucepan or large skillet and transfer to the slow cooker for the slow cooking part.
  • Cooking spoon or spatula

Pendle Witch Lamb Stew Ingredients

You’ll just need a handful of delicious, tasty, seasonal ingredients to create our delicious slow cooker lamb casserole recipe.

  • 1 tbsp olive oil – or use rapeseed oil
  • 400g diced lamb shoulder
  • 1 large onion – roughly diced
  • 2 chunky carrots – sliced
  • 1/2 swede – diced
  • 800g small-medium pumpkin or squash – peeled, deseeded and diced
  • 2 sprigs of rosemary – leaves picked and finely chopped – I grow rosemary in a pot by the door, it’s simple to grow and adds a lovely flavour to stews.
  • 1 bay leaf
  • 1 tsp ground coriander
  • 300ml beef or lamb stock (or beef broth)
  • 125ml red wine
  • salt and pepper

How To Make Slow Cooker Lamb Stew

You’ll just LOVE how simple our slow cooker diced lamb recipe is to prepare and cook, the instructions are easy.

I use a slow cooker with a hob safe removable pan, so I start the stew off in that on the hob and then transfer to slow cooker .

Step One – preheat the slow cooker to low

  • Preheat the slow cooker to the low temperature setting.

Step Two – brown the diced lamb

  • Add a splash of oil to the saucepan and fry the diced lamb for a few minutes until it browns and has lovely browned bits on the edges.

Step Three – add the rest of the slow cooked lamb casserole ingredients

  • Throw in the onion, carrots, swede, pumpkin, rosemary, coriander and bay leaf and mix gently.
  • Pour over the stock and red wine, season with salt and pepper, bring to the boil over a medium-high heat and transfer to the slow cooker.

Step Four – cook the lamb casserole

  • Cook on low for around 8 hours.

Make Pendle WitchStew Your Way

There’s lots of ways to switch up this tasty slow cooker lamb casserole recipe to give it your own flavour twist!

  • Switch the lamb for beef and the red wine for ale. Or try making with lamb shanks.
  • Add some oomph – sprinkle on freshly chopped chilli, lemon zest, fresh parsley and grated cloves garlic as you serve it.
  • Stir some tinned chopped tomatoes, chopped root ginger, tomato paste and a pinch of cinnamon into the stock and wine when you load up the slow cooker for a sweeter flavor.
  • Turn this into a Pendle Witch Pie – top with a pastry lid, maybe a cut out of a witch broom on top…
  • You can cook this easy lamb stew in a Dutch oven or casserole dish in the regular oven if you prefer. Just brown the lamb in batches, then add the rest of the ingredients, bring to the boil and then cook in the oven on 160C for around 2-3 hours – checking often and topping up and stock as needed.

It’s also absolutely fantastic for a candle lit cosy Halloween dinner recipe, you could even serve the slow cooker lamb recipe in hollowed out pumpkins as bowls.
