So guess what! It’s a Monday meal on a Monday!

This is SUCH a Monday recipe in my eyes. Tastes delish, is easy to throw together, is satisfying and simple. But packed with a flavor punch.

You know what a huge fan of salmon I am. I almost said “we” and used the term “in this house,” but then I remembered that Eddie doesn’t love salmon. He will eat it, but it’s not his go-to seafood or fish. He much prefers a white fish or something like shrimp or scallops.

That being said, if I really want it or if I’ve tested some new recipes, he will eat it. So I want to make it as good as possible. Because I’m still hoping to convert him, you know?

This flavor combination is ridiculously simple but GOOD. I’ve told you about this quick bbq-like spice rub for almost ten years. It’s an awesome way to get some bbq flavor and spice (think slightly sweet and smoky) without a sauce or a specific mixed spice rub. Those things are great, don’t get me wrong, but since you may not always have them on hand, this is the next best thing. I promise!

A little spice rub and a tiny maple drizzle will go a long way, I tell you.

I like to make this with a super simple yet flavorful side, since the salmon has so much taste. Pearl couscous is one of my favorites and has been since I first had it – which was maybe when I was 20? 21?

I’ve loved it ever since. Sometimes I use it as the base of my grain bowls or salads. Other times, I make a simple side like this, drizzle it with brown butter and go to town.

For a veggie, my go-to is always my parmesan roasted broccoli. I love that when combined with my favorite veg, this is a MEAL. It sounds funny, but having three components to a meal (the entree, two sides) is such a nostalgic, feel-good thing in our house. It’s how I grew up eating dinner almost every night. Sometimes when I think back to how my mom got a meal like that together almost every.single.night?! It’s crazy. And inspiring. And I love it!

So here we are. Eat up.

Yield: 2 to 4 people

Prep Time: 15 minutes mins

Cook Time: 30 minutes mins

Total Time: 45 minutes mins

This maple bbq salmon is a quick and delicious weeknight meal. Serve with brown butter couscous and your favorite veg to round it out!

Instructions

  • Preheat the oven to 400 degrees F. Place the salmon on a baking sheet.

  • In a small bowl, whisk together the sugar, garlic powder, paprika, salt, pepper and cumin. Sprinkle it all over the salmon filets. Drizzle each filet with the maple syrup and use a spoon to kind of “spread” it all over the filet.

  • Roast for 10 to 15 minutes, until the salmon just flakes with a fork. If desired, you can brush with a little more maple syrup when it comes out of the oven. Top with chopped chives. Serve immediately with brown butter couscous!

  • Heat a large saucepan over medium heat and add the butter. Stir in the couscous until coated, then cook for 2 to 3 minutes, stirring, until the couscous is slightly toasty. Add in the stock and salt and bring the mixture to a boil. Once boiling, reduce to a simmer and cover. Cook for 15 minutes, or until the liquid is absorbed.

  • While the couscous is cooking, heat a small saucepan over medium heat and add the butter. Cook, whisking often, until brown bits appear on the bottom of the pan. Remove the butter from the heat and stir in the garlic cloves.

  • Once the couscous is finished, drizzle with the garlic brown butter. Toss and serve.

    I tried this last night in our air fryer with smaller filets – and it was amazing. It was actually so good, I was staring at my husband waiting for him to be impressed with my skills. He just silently ate his salmon, so I prodded, “How are you not going to say anything about this salmon?! It’s so good!” He replied with, “Oh, I figured you’d bought it this way”

    Made this for dinner last night – so easy and delicious! Don’t think I have made couscous before, but I really liked the pearl kind. I added some chopped kale to the couscous because it needed to be used up and to counteract some butter. Haha. Will definitely make again!

    Great recipe! It was simple to make but tasted way more fancy. Delightful! My boyfriend and I both enjoyed it! I couldnt find couscous at my store so I used rice but and added a bit of greens but it still worked!

    This was so delicious! By far the best salmon I’ve made in my own kitchen. I used the entire rub on two pieces of salmon though – it may be worth doubling the rub if you’re making four portions.

    I made this for dinner tonight and my husband and I both loved it! I didn’t have any couscous and used ditalini pasta (leftover from your fire-roasted minestrone recipe) instead, and it turned out great.

    So incredibly good! I’m not a fan of salmon so I used pork tenderloin instead and adjusted the cooking time accordingly. Also made the Parmesan roasted broccoli to go with the meat and couscous. Sooo good!!!

    I made this salmon last night and it was really delicious! You do have to “pat” down the maple syrup so it doesn’t just slide off, so pay attention to that step! I think next time I’ll use dark brown sugar to give it even more of a deep caramel-maple flavor. Thanks for the great recipe!!!

    Ok, So this was like all the other reviews state! Absolutely AMAZING. This dish had a fine dinner out feel, yet healthy and even better yet super simple to make. While I browned the butter I also tossed in a couple small shallots that got crispy while butter browned and than added garlic. Everything was so delish! Husband also raved about it. I felt it was enough food but I did see a comment about wanting an additional side, you could very well pair this with spicy green beans.

    This recipe was recommended by roseclearfield.com as an acid-reflux friendly meal and it’s the only reason that I don’t completely regret ever meeting my ex boyfriend. Now forever in my recipe collection!

    I liked it, but I will change the proportions if I make this again.

    There’s way too much butter for a GERD friendly dish, besides, I don’t like that much better to begin with.

    The Salmon topping is way too sweet, again, that’s not GERD friendly. I had to scrape off quite a bit of it.

    Would’ve been nice to have the chives listed as an ingredient so I could’ve had it ready, but, then I could’ve also taken more time to read it through.

    The instructions sequence didn’t make sense to me.
    Step 2, should only be to mix the ingredients for sprinkling them on later.

    Sprinkling and Roasting the Salmon should be done while the couscous is cooking – roughly similar time frame 10 -15 minutes. This way they’re both hot and ready to be plated at the same time.

    Garlic is to be avoided according to my doctor, but this can vary for people. Powdered garlic is a good alternative.
