Instant Pot Sweet Potatoes. “Baked” sweet potatoes made quicker in the instant pot! Vegan, gluten free, and SO versatile!

And this is why I love my Instant Pot.
Perfect “baked” sweet potatoes in under an hour.
These instant pot sweet potatoes require TWO ingredients (ahem, sweet potatoes and water) and literally 5 minutes of prep (or however long it takes you to clean a sweet potato).
I love this recipe, because:
- It’s quick and easy.
- It’s healthy. Sweet potatoes are one of my fave “health” foods.
- It’s vegan, vegetarian, gluten free, dairy free, etc.
- It’s versatile. I’ll list some of my favorite ways to serve “baked” sweet potatoes below.
- It’s perfect for meal prep. Make 4-6 sweet potatoes on Sunday night and lunch is ready for the week!

This is why I love my instant pot.
What do i need to make instant pot sweet potatoes?
- Instant Pot
- Instant Pot trivet (it comes with the IP)
- Water
- Sweet potatoes
How to make baked sweet potatoes in the instant pot:
- Place 1 cup of water in the instant pot.
- Place in the trivet.
- Place 4-6 (10 oz) sweet potatoes on top of the trivet.
- Cover and lock the lid (make sure the steam releasing handle is pointing to SEALING).
- Cook on HIGH pressure for 15 minutes. Remember: the count down doesn’t start until after the IP has come to pressure, which does take some time.
- Once the IP beeps to signify it’s done, let it naturally release for 10 minutes. If the pressure valve hasn’t unlocked, flip the valve to “VENTING” to finish releasing the pressure.
- Serve and enjoy!
Best way to serve “baked” sweet potatoes:
- Butter, salt, and pepper
- Butter, salt, and brown sugar
- Drizzle with almond or peanut butter

Thanks for this great and simple recipe! BTW, “butter” is not vegan nor dairy-free. :o( Try adding Daiya Mozzarella-style cheese shreds and heating in the microwave for 1 minute or so.
