How to store and reheat pastries (2024)

Viennoiseries:

To store

If eating pastry the day after purchased, store in the fridge overnight. If keeping for longer, tightly wrap individual pastries in aluminum foil and store in freezer until ready to eat. (We recommend that frozen pastries be consumed within one month, andrefrigerated pastries be consumed within three days).

To reheat

  1. Preheat oven or toaster oven to 350 degrees.
  2. Bake a foil-wrapped pastry until it springs back when you gently press down on the top (about 10 minutes).
  3. Peel back the foil to expose the top of the pastry and bake until crisp to the touch (about 5 minutes).

Baking while sealed in foil steams the pastry, allowing the interior to reabsorb moisture, and then baking with the foil open crisps the outer shell.
