Been making cocktail sauce with fresh horseradish for a long time. Here in Houston, folks tend to like it on the spicy side and I tend to use a heavier ratio of horseradish to ketchup; also a LOT of Tabasco. For a twist, one can use Maggi sauce rather than “wooster” sauce. Soy sauce bends it another direction as well.

While Cocktail Sauce is delicious with shrimp, IMO it overpowers the flavor of the oysters. Better to use a mignonette or, my favorite, just fresh lemon juice and prepared horseradish (and Tabasco).

1/3 cup Hot Pace Picante Sauce and a 1/3 cup ketchup makes great spicy version of cocktail sauce.

I'll never buy cocktail sauce again. Especially if you don't want high fructose corn syrup with your shrimp. We made it with cane sugar ketchup.

Add some chopped scallions and celery for color and crunch.

The only suggestion I have is to add 1 tbsp of brown sugar, otherwise everything is perfect. This version is borrowed form an elderly low country cook who loved her oysters fresh and plentiful, washed down with a good basic lager.

John is right. I use 50/50 Chili Sauce and Ketchup a la Justin Wilson.

Using Heinz Chili Sauce instead of ketchup makes a more interesting texture.

That is exactly how I make mine. Much more flavor than plain ketchup.

I agree John. I only use ketchup if I'm out of chili sauce--still good, but less interesting!

Summers on South Shore of Long Island...spending the w'end on our converted Coast Guard all steel 30' fire boat...swimming & sailing all day while Dad brought in a haul of Hard Shell or Soft shell clams! Sat. night dinner was one or the other w'his Cape Cod cocktail sauce...ONLY Heinz Chili Sauce w'horseradish & a squirt of lemon & some really good French bread!
